Back in 2009/2010 The Knox Mill, which was opened just after the Civil War and produced the felt ribbons that were essential to paper production at the time, was renovated. When a restaurant was slated to go into the space we were contacted. Renovating the Knox Mill to accommodate 40 Paper was a fun and unique project that required specialized skill and care. We were able to preserve the historic integrity of the building while exposing some of the old brick and wooden beams of the former mill and constructing the bar; which is the centerpiece of the restaurant.
